Sample: when a recipe changes
In a fictional salad, the kitchen replaces its lemon juice, olive oil and salt with a dressing from a new supplier. This sample follows the dish’s record from the change to the kitchen’s re-confirmation.
The dish
DEMO-06, the kale and quinoa salad with almonds from our sample demo, is fictional. Version v1 of its recipe has 410 mg of sodium in a 300 g portion: 137 mg per 100 g.
What changed
The kitchen replaces the lemon juice, olive oil and salt with a dressing from a new supplier. That makes version v2 of the recipe: 650 mg of sodium in the same 300 g portion, or 217 mg per 100 g.
| Version | Sodium (mg) | Sodium per 100 g (mg) | Against the 600 mg example limit |
|---|---|---|---|
| v1 (before) | 410 | 137 | 190 mg below |
| v2 (after) | 650 | 217 | 50 mg above |
Between the change and the re-confirmation
By design, a dish whose recipe changes is withheld from the results diners see until the kitchen re-confirms its record.
In this sample, the salad is withheld between the recipe change and the re-confirmation, instead of being shown with figures that may no longer be right.
Version v1 stays in the record as history, so it is clear what changed and when.
After the re-confirmation
Once the kitchen re-confirms version v2, the salad is checked again. Against the 600 mg example limit, it is now 50 mg above.
Nothing else about the salad was judged. Its record changed, and it was checked again against the same example limit.
